North African Short Rib Tacos

These tacos filled with flavorful short rib and spiced couscous are sure to be a crowd-pleaser. 

Ingredients

1/8 tsp. Turmeric, Ground

1/8 tsp. Peppercorn

1/8 tsp.  Cumin, Seeds

1/8 tsp. Onion Powder

2 2/3 tbsp. couscous, Pre-cooked

3 oz. Hormel® Firebraised™ Beef Short Rib

1 tsp. Olive Oil

2 2/3 oz. short rib jus

1/8 tsp. arrowroot

1/8 tsp. Salt, Kosher

1/8 tsp. spice mix

2 2/3 tbsp. Water

1 1/3 tbsp. sundried turkish apricots

1 each Tortilla, Corn

Steps

  1. Pre-heat oven to 325 degrees.
  2. Toast all spices and then grind in grinder.
  3. Open 1 packet short ribs, set aside jus.
  4. Cook short ribs in oven for 20 minutes.
  5. Bring water to a boil and add couscous, cover and turn off heat  - let sit for 10 minutes.
  6. Grill tortillas.
  7. Add spice mix and olive oil to cous cous.
  8. Remove short ribs from oven, rest for 10 min.
  9. Compile tacos.
