This brunch recipe is worth its weight in gold, with a sunny egg and spicy fish dip on top of cool 'cado.

Ingredients

4 avocados
4 pieces sourdough bread, sliced 1"
1/3 cup spicy Alaska pollock roe aioli (see below)
2 tablespoons furikake
1 tablespoon cilantro

Steps

  1. Make the spicy pollock roe aioli by chopping together the garlic, spicy pollock roe and preserved lemon until it makes a fine paste.

  2. Combine the garlic and lemon mixture with the egg yolks in a bowl.

  3. Slowly drizzle in canola oil until the mixture is thickened.

Additional Tips

make sure you have crisp sourdough to stand up to the toppings.
