Key Lime is one of those enduring flavors that never feels out of place on the menu. To freshen up your cookie lineup, this recipe from Otis Spunkmeyer could be just the ticket.

Ingredients

2 Otis Spunkmeyer Sweet Discovery 4 oz. White Chocolate Macadamia Nut Cookies

coconut frosting, recipe follows

fresh lime zest, as needed for topping

For the coconut frosting:

8 oz. cream cheese

1/4 cup coconut milk

2 cups powdered sugar

1/4 tsp. salt

1/2 cup fancy shredded coconut

Steps

  1. For the frosting: Whip the cream cheese and fold in the powdered sugar and salt. Add the coconut milk and fancy shredded coconut and beat until the icing is smooth.

  2. Bake the cookies per the manufacturer instructions.

  3. Allow to cool 1 hour or until room temperature.

  4. Spread 0.5 oz of the coconut frosting across the top of each cookie.

  5. Apply fresh lime zest to each cookie, being careful not to zest the pith or white part of the lime skin.

  6. Let the cookies rest in the refrigerator or cooler before serving.
