Curried Avocado Triangles with Fresh Mint Sauce

YIELD: 12 servings

FOR THE MINT SAUCE:
4 oz. mint leaves
4 oz. shallots, coarsely chopped
3/4 cup lime juice
1/2 cup lemon juice
1/2 cup water
3 Tbsps. sugar
1 tsp. salt

FOR THE AVOCADO TRIANGLES:
3 each avocados
1 Tbsp. curry powder
1/2 tsp. salt
72 each wonton wrappers
as needed vegetable oil for deep frying

  1. In a food processor, puree all the ingredients for the mint sauce (mint leaves through salt); set aside or refrigerate for later use.

  2. Roughly mash avocados; add curry powder and 1/2 tsp. salt.

  3. Place one generous teaspoon of avocado mixture in one corner of a wonton wrapper. Brush edge with water. Fold over into a triangle; press to seal. Repeat with remaining wonton wrappers.

  4. Deep fry triangles until golden, about 2 minutes. Serve with fresh mint sauce on the side.
