3 cups onions, diced
1 cup green bell pepper, diced
2 Tbsps. garlic, minced (from jar)
2 Tbsps. vegetable oil
1 #10 can Bush’s Best Vegetarian Baked
Beans (7 lbs., 5 oz.)
1 1⁄2 qts. tomatoes, diced, canned
3 cups tomato sauce, canned
2 cups corn, canned, drained
1⁄4 cup Worcestershire sauce
1 Tbsp. Italian seasoning, dried
1 Tbsp. salt
1 tsp. black pepper
26 hamburger buns
1 1⁄2 lbs. red onion, cut into strips

  1. In steam-jacketed kettle, sauté onions, peppers and garlic in oil until tender but not soft.

  2. Add remaining ingredients to kettle with vegetables. Simmer for 30 minutes, stirring occasionally, until mixture thickens.

  3. Transfer to a 4” deep half-size hotel pan. Place on hot serving line.

  4. For each serving: Toast one bun. Lay bun open-faced on serving platter. Ladle one 8-oz. portion beans over top of buns. Add 1-oz. sliced, strip or diced red onion.
