Yield: 1 muffin
2 eggs
chopped red pepper, as needed
green onions (scallions), slivered, as needed
coarse ground black pepper, as needed
1 English muffin, split, toasted
Muenster cheese, sliced, as needed
3 slices Sandwich Builders Beef Pastrami

red onion, sliced thin, as needed
sliced tomatoes, as needed
Scramble eggs with red pepper, green onion and black pepper.
Layer bottom half of English muffin with a slice of Muenster cheese.
Top with scrambled eggs, slices of beef pastrami, slice of Muenster cheese, red onions and slices of tomato.
Place top of muffin on sandwich and heat in microwave oven for 1 minute to melt cheese.
