Our staff was looking for a creative way to offer senior living residents a seafood option during the Lenten season. Paula Saltzman, the executive chef from the Legacy Terrace Community, created this dish, and our residents absolutely fell in love with it—so much so that we’ve added it to our regular menu rotation. Apricot preserves combined with the havarti cheese, shrimp, mushrooms and green onions give the quesadillas a sweet and savory flavor twist.
