Creative and flavorful vegetarian cooking is gaining a following. This Thai-inspired wrap with a peanut dressing is a great alternative to the traditional veggie burger.

Ingredients

1 cup Oriental salad dressing
1⁄2 cup peanut butter
Olive oil
4 (3.4-oz.) veggie patties
4 lavosh flatbreads or 10-in. flour tortillas
4 oz. shredded Napa cabbage
4 oz. julienne carrots
1 red onion, slivered
1 bunch cilantro, chopped
Snow peas
Red bell pepper strips
 

Steps

1. Combine salad dressing and peanut butter in small bowl; mix well and reserve.

2. Lightly coat flat or open grill with olive oil and heat. Cook patties on hot surface for 3 to 4 min. per side, or until heated through and browned. Cut into small pieces.

3. Place lavosh on grill and heat 30 sec. per side.

4. Spread peanut dressing on each lavosh; top with veggie patties, cabbage, carrots, red onion, and cilantro; roll up. Serve with snow peas and red peppers.
