1. Ancient grains

Benefits: Amaranth, spelt, kamut and the like are higher in protein than whole wheat, the USDA reports.

Being used in: Grain salads; side dishes (mixed with vegetables such as spinach or butternut squash).

2. Fermented foods

Benefits: Commonly fermented foods, such as sauerkraut and kimchee, contain probiotics which can aid in digestive health.

Being used in: Pickled fruits and vegetables; kombucha beverages.

3. Dandelion greens

Benefits: The slightly bitter green is chock-full of vitamin A, vitamin K and calcium.

Being used in: Salads; soups (as wilted greens).

4. Matcha

Benefits: The green powder is packed with antioxidants, including polyphenols and EGCg, which also is found in green tea.

Being used in: Tea beverages; smoothies; baked goods.

5. Goji berries

Benefits: The berry is high in both antioxidants and vitamin-A compounds.

Being used in: Yogurt and oatmeal toppings; pureed into smoothies.
