YIELD: 6 1-SLICE SERVINGS

1 Tbsp. olive oil
1½ lbs. yellow or red onions, halved and sliced (about 5 cups)
8 oz. spicy fully cooked smoked sausage, sliced
1 Tbsp. balsamic vinegar
1 12" Italian bread pizza shell
¼ cup broken toasted walnuts
8 oz. mozzarella cheese, sliced
1 Tbsp. chopped fresh oregano
2 tsps. chopped fresh thyme
½ cup roasted red bell-pepper or pimiento strips

1. In a large skillet with olive oil, sauté onion and sausage for 8 to 10 minutes or until tender. (Add additional oil if needed.) Add vinegar and mix.

2. Turn onion-sausage mixture over onto the pizza shell. Top with walnuts, mozzarella, herbs and bell pepper. Bake at 400°F for 15 minutes or until hot through. Slice into 6 wedges.
