YIELD: 12 servings

24 commercial frozen chicken-breast tenderloin fritters

Spicy Orange Sauce:
1½ cups sweet chile sauce
1½ cups orange marmalade
2 tsps. Sriracha hot sauce

Asian Sesame Slaw:
18 oz. shredded cabbage-slaw blend
6 oz. tricolor bell peppers, julienned
6 oz. red onions, julienned
1½ cups commercial sesame/ginger dressing
12 warm 10" flour tortillas

1. For chicken: Deep-fry fritters at 350°F for 3 to 5 minutes or until internal temperature reaches 165°F for 15 seconds. Reserve warm above 140°F.

2, For spicy orange sauce: In saucepan over low heat, combine ingredients. Cook 2 to 3 minutes, stirring, until fully blended. Reserve warm.

3. For Asian sesame slaw: In large bowl combine ingredients and toss to blend. Cover and chill to hold.

4. Per order: Lay 1 tortilla out on clean work surface. Arrange 4 oz. slaw across center of wrap. Combine 2 tenderloins and 2 Tbsps. orange sauce in a bowl and toss to coat chicken. Layer glazed tenderloins over slaw. Fold closed and arrange on a plate with 2 Tbsps. orange sauce portioned in a ramekin.
