Although school gardens have benefited students by increasing their intake of fruits and vegetables, three out of four U.S. schools don’t have one, Take Part.com reports.

Enter foodservice vendor Sodexo and garden start-up, Back to the Roots, which have partnered together to provide 2,300 schools with garden kits.

The kits will teach students about gardening and nutrition, and allow them to grow herbs and mushrooms as well as a mini aquaponics garden.

Take Part also contends that allowing students to tend to a school garden would increase produce consumption, while a recent study led by Texas A&M found school meals paired with popular vegetables are less likely to end up in the garbage.

Longer lunch periods can also increase students’ consumption and reduce waste, as FoodService Director recently reported.
