This month, Baptist Health South Florida saw plant-based hospital food service sales soar after a new coalition led by the Humane Society of the Unites States is formed. Oldways, the Physicians Committee for Responsible Medicine, Health Care Without Harm and Meatless Monday are also involved in the coalition that works together to help hospitals offer more plant-based menu items by using hands-on training, recipes, menus, programs and more.
Also, hospitals and healthcare facilities across the country have been hit by the coronavirus pandemic. On this week's episode of One On One With, Becky Schilling spoke to Aatul Jain, executive chef at Saint Peter’s University Hospital in New Brunswick, N.J. They discussed how food and nutrition departments will continue to serve their No. 1 customers—their patients—and how they are ensuring the health and safety of employees, including their mental well-being during what can only be described as high stress.
