This cocktail calls for a little advance prep to create the Lemon Cordial and Pear Prune Shrub, but it’s well worth it.

Ingredients

For the cocktail:

2 oz. California Prune Pear Shrub

1 oz. Lemon Cordial

.75 oz. lime juice

2 dashes orange bitters

Steps

  1. For the Finely Pruned Cocktail: Shake the ingredients with 2 sprigs of thyme and 1 sprig of rosemary. Strain into a wine glass with ice.  Garnish with herbs of choice and dried lemon and lime wheels.

  2. For the Lemon Cordial: Bring the water to a simmer, add the lemon peels, set aside to cool.  Once it’s cool, strain the water off and add the sugar, bring back to a simmer to dissolve the sugar.  Cool the mixture down and stir in the lemon juice.

  3. For the Prune Pear Shrub Cover the prunes and pears with the sugar and place in the refrigerator for 2 days. Take the accumulated liquid and add equal parts apple cider vinegar.
