Q. What is the best part of your job?

Eating great food.

Q. What is the worst part of your job?

Eating food that is not great.

Q. What do you consider to be your greatest achievement?

Raising my children.

Q. What is the most unusual foodservice/catering request you have ever received?

Pig’s feet.

Q. If you weren't in foodservice what would you be doing?

Selling something.

Q. Which talent would you most like to have?

Invisibility.

Q. If you could change one thing about yourself, what would it be?

Slow down and not take on so much at once. My team would like this for sure.

Q. What is your greatest fear?

Monsters.

Q. Which living person do you most admire?

Charles Townes, the inventor of the laser. Without his work we could never have invented the lightsaber.

Q. What is your favorite meal?

Rice and beans.

Q. What is your guilty pleasure?

Chocolate chips—I eat a bag a week.

Q. What will people always find in your refrigerator?

Hot sauce.

Q. What is the weirdest food you have ever eaten?

Blood and liver mush. I am still not sure what was in it and do not want to know.

Q. What do you consider to be the most overrated foodservice trend?

Both, and a day person also.
