INGREDIENTS:1 carton Classic Casserole® Au Gratin Potatoes with 2 seasoning packets
4 ½ quarts water, boiling
½ cup butter, unsalted, melted
4 cups bacon, hickory smoked, crisp, crumbled
2 cups green bell peppers, seeded, diced
4 cups corn, frozen, thawed, drained
4 cups cheddar cheese, shredded
1 cup adobo sauce, commercially prepared
¼ cup garlic, roasted
2 Tbsp. cumin, ground
4 tsp. chili powder, ground
4 cups jalapeño jack cheese, shredded
1 cup cilantro, fresh, chopped DIRECTIONS:Preheat oven to 400°F (350°F convection). In full-size steamtable pan, combine boiling water with seasoning packets and butter. Whisk well to blend. Add next 8 ingredients and Classic Casserole® Au Gratin potato slices. Mix thoroughly. Place in oven and bake for 45 minutes or until potatoes are tender.
