INGREDIENTS:1 lb., 10 ½ oz. cooked white rice
15 oz. wild rice
2 3/4 oz. red onion, diced
1 ¼ oz. green pepper, diced
1 ¼ oz. red pepper, diced
3/4 oz. parsley, chopped
4 3/4 oz. dried cranberries
2 3/4 oz. pecan pieces
3/4 tsp. salt
3/4 tsp. ground black pepper
½ tsp. paprika
1 ½ cups orange sections
2 cups orange Dijon dressing
(recipe follows)

Orange Dijon Dressing
Yield: 2 cups
3 ½ tsp. olive oil
2 ¼ oz. tarragon vinegar
2 ¼ oz. honey Dijon mustard
1 ¼ oz. pure clover honey
9 tbsps. Mandarin oranges, drained
1 1/8 tsp. salt
3/4 tsp. ground black pepper
1 3/4 tsp. orange peel
3 ½ oz. orange juiceDIRECTIONS:1. Mix all ingredients together until well blended. Gently stir in dressing. Top with additional orange sections, if desired, and serve.

For Orange Dijon Dressing:
