INGREDIENTS:1 lb. crabmeat
2 egg whites
1 egg yolk
3/4 lb. Idaho potatoes, mashed
1/3 cup chopped red onions or chives
½ cup chopped California Walnuts
1 cup bread crumbs
pinch of saltDIRECTIONS:Combine crabmeat, egg whites, egg yolk, potatoes, onions, salt, ¼ cup chopped walnuts and ½ cup bread crumbs in bowl. Form into 8 flat patties. Mix together remaining ½ cup bread crumbs and finely chopped walnuts. Coat crab patties with bread crumb mixture. Cook over medium heat in skillet brushed with oil.

Serve with lemon wedges or fresh tomato relish made with chopped green and yellow peppers, red onion and diced, seeded tomatoes, seasoned with salt and pepper to taste. (May substitute already prepared salsa.)SERVINGS:4 servingsPHOTO CREDIT:Photo Credit: CALIFORNIA WALNUTS
