Meatballs in Plum Sauce 2004

YIELD: 96 meatballs

2-1/2 lbs. ground turkey
2-1/2 lbs. mild Italian sausage
5 oz. onion, finely diced
2 oz. ginger, minced
2 oz. garlic, minced
1/2 cup cilantro, chopped
1/2 cup soy sauce
2 each eggs
2 Tbsps. salt
as needed vegetable oil
6 cups prepared plum sauce

  1. Mix together ground turkey, sausage, onion, ginger, garlic, chopped cilantro, soy sauce, eggs and salt until well-blended. Form mixture into 96 1-oz. balls.

  2. Heat oil in heavy sautè pan; brown meatballs on all sides. As they finish browning, transfer meatballs to large rondo.

  3. Add plum sauce to rondo; bring to a simmer over medium heat. Simmer, covered, for about 5 minutes, or until meatballs are cooked through. Serve with sauce.
