Food Service Search Staff
INGREDIENTS:2 cups Maine lobster meat, fresh or frozen
¼ cup plain yogurt
¼ mayonnaise
½ cup sliced celery
¼ cup chopped green pepper
1/3 cup chopped walnuts or almonds
½ cup apple, unpeeled and diced
½ cup seedless red grapes cut in halves
3 pita breads
as needed, shredded lettuceDIRECTIONS:If necessary, thaw lobster meat in refrigerator overnight. Drain, remove cartilage, and chop. In a bowl, combine all ingredients except pita bread and lettuce. Cut pita bread in half. Line pita pockets with lettuce. Fill with ½ cup lobster mixture. SERVINGS:6 servingsFrom:MAINE LOBSTER PROMOTION COUNCIL
