This super sour citrus is commonly cultivated in Japan, the Koreas and China, but can now be found growing in California.
Yuzu is a hybrid of primitive citrus and a sour mandarin orange, which provides a unique citrus profile that is subtle and floral with a hint of mandarin, reports food industry market research firm Datassential. With a small amount of sour and tart flesh and large seeds, the peel and juice are the most common components used in application.
You can spot yuzu across menus from brightening up light proteins like fish to adding a delicate citrus and floral take on dessert.
