This riff on an agua fresca makes for a refreshing drink to pair with Mexican food. Serve it as a mocktail or add a jigger of tequila, gin or vodka as they do at Tankard & Tun in Seattle. The watermelon cocktail is a welcome alternative to the usual margarita.

Ingredients

Drink

½ oz. simple syrup

2 slices cucumber

3 sprigs mint

4 oz. watermelon juice

2 oz. tequila, gin or vodka

Garnish

1 cube watermelon

1 slice cucumber

1 mint leaf

1 bar skewer

Steps

  1. For each serving, combine syrup, cucumber slices and mint sprigs in bottom of cocktail shaker; muddle to crush ingredients.

  2. Add watermelon juice and spirits, if using. Shake to combine and strain into tall 10-ounce glass. Add ice cubes to chill.

  3. For garnish, skewer watermelon cube, cucumber slice and mint leaf; place across top of glass. Serve immediately.
