Silken tofu provides body and creaminess to this salad dressing, habaneros add heat and fresh mangos give it a fruity finish. Drizzle the dressing over greens or serve it on a salad bar as a creamy, dairy-free alternative to please vegan diners.

Ingredients

1 package (12 oz.) silken tofu, drained well

2 ripe mangoes, peeled and roughly chopped

½-1 habanero chili, minced

Juice of 2 limes

2 tbsp. tamari

2 tbsp. honey

½ cup soybean oil

Salt and pepper, to taste

Steps

  1. In mixing bowl, combine tofu, mangoes, chili, lime juice, tamari and honey. With immersion blender, blend ingredients until pureed. (Or place in blender container and puree.)

  2. Slowly add oil to emulsify while still blending. Taste and adjust seasonings with salt and pepper.
