University of Kentucky to open ‘community cafe’ where meals are just $1

The University of Kentucky’s dining team will replace its Fusion Cafe concept with a new “community cafe” where meals will cost just $1.

The cafe, called One, opens Monday. It will serve lunch five days a week in an effort to curb food insecurity and give students an affordable option for healthy meals.

Meals will include one entree with two sides, and vegan items will be on the menu, per a press release from the university. Students will also be able to purchase an additional meal for dinner.

One’s opening comes shortly after a group of University of Kentucky students waged a hunger strike to raise awareness of food insecurity at the school and to implore university administration to address that and other issues.

The school’s president, Eli Capilouto, met with protesting students earlier this week and announced plans to hire a full-time employee who will act as a point person for addressing food and housing insecurity, reported local media outlet WKYT.
