Late last year, the Tisch Center for Food, Education and Policy at Columbia University’s Teachers College released a report on a pilot program that had been launched at five Bronx schools. During the pilot, school meals were made from raw ingredients rather than processed or reheated components. Staffers successfully served scratch-cooked meals to hundreds of students, the prep of which included peeling fresh ginger root, slicing pounds of raw onions, cleaning raw chicken thighs and measuring multiple spices. The school system continues to tweak menus based on feedback, including from students.
