“We introduced an all-vegan bar that rotates on a weekly basis in our salad bar area. One of the hits is a lazy egg roll, which we make vegan by utilizing jackfruit. We are also highlighting different techniques … pickling a lot more vegetables and smoking meats, vegetables and even tofu.”
