The cafeteria at Calumet New Tech was redesigned to look like a fast-casual restaurant, with booth seating, high-top tables and an open kitchen. In addition to a build-your-own nachos bar and customizable sandwiches, healthy snacks are available throughout lunch service. Chartwells K-12, the school’s foodservice partner, is putting a variety of plant-forward items on the menu, such as this salad shaker featuring brown rice, black beans, bell peppers and corn, dressed with a vinaigrette flavored with cumin, cilantro and lime juice. Another salad shaker combines cooked barley with lettuce, carrots, blue cheese, chicken and Buffalo-style sauce. This format is a great way to introduce new whole grains to encourage students to expand their nutritional horizons, says Chartwells Director of Culinary Growth & Development Paul Sottile.
