Snacking is occurring more often throughout the day, according to Technomic’s Snacking Occasion Consumer Trend Report, and a.m. snacks are on the upswing, with 44% of consumers saying they eat snacks as a second breakfast once they get to work or school. Greenville County Schools recently started to feed this midmorning craving with housemade cinnamon rolls. The recipe for the yeast-raised buns comes from Kim Cobb, one of the district’s kitchen managers and a certified pastry chef. It’s completely compliant with USDA nutrition regulations, says Joe Urban, director of food and nutrition services. “So far we have only served these in elementary schools but would like to eventually push the recipe out to all our schools,” he says. “Students and staff love them.”
