Univ. of Portland Opens New Dining Venue Named for Alumnus, Bon Appetit CEO Fedele Bauccio

The University of Portland (OR) has unveiled its new Bauccio Commons, named for alumnus Fedele Bauccio, CEO of the school's dining services provider, Bon Appetit Mgt. Co. Bauccio, who graduated from Portland in 1964 and launched Bon Appetit (now a unit of Compass Group) in 1987, was closely involved in the building's design.

The 14,000 sq.ft. space includes a board room, a new outdoor patio that opens to the university’s main quad and a serving area with 10 new made-to-order food concepts. They include a hand-tossed pizza station, a sushi bar, a taqueria and a pasteria and with a grill, carvery, salad bar, deli, and coffee bar.

The eatery uses standard Bon Appetit sustainable strategies like local and ethical sourcing, organic ingredients, composting and an emphasis on reducing food waste. In fact, according to Bon Appetit GM Kirk Mustain, food waste has been reduced 70 percent from the previous incarnation of the dining venue, which was originally opened in 1952.
