University of Dayton surpasses its plant-based goal

The university established a goal to serve 30% plant-based options by 2025. The dining program now offers over 40% plant-based entrees.

Sustainability-minded operations may want to keep an eye on what University of Dayton is doing in terms of plant-forward fare. The Ohio university surpassed its plant-based goal, which it established in 2021 when it signed onto the Forward Food Collaborative Pledge.

The university set a goal of serving 30% plant-based entrees by 2025. It now serves over 40% plant-based entrees, according to a press release from the Humane Society of the United States (HSUS).

On offer at the university are plant-based breakfast burritos, omelets, veggie Philly cheesesteaks, build-your-own bowls and pizzas. In addition to menuing more plant-forward fare, the culinary team has also participated in numerous culinary trainings from HSUS.

"Here at the University of Dayton, we are proud to offer our students delicious, healthy, and environmentally-friendly food options, thanks to our collaboration with the Humane Society of the United States,” said Ligia Lopes, University of Dayton’s administrative dietitian, in a statement. “Our culinary staff's dedication and leadership have made this possible, and we will continue to strive for a positive impact on both our campus community and the environment.
