Nathan’s Famous, Slapfish, introduce Surf’N Turf collab

The limited-time offer will be available at both chains’ flagship restaurants through summer

Nathan’s Famous, the quick-service chain that has long been known for its hot dogs, has been undergoing something of a culinary revolution in recent years, with new high-end burgers, cheesesteak subs and, recently, the first large chain with a chicken sandwich made out of thigh meat.

And now, through the summer, the Jericho, N.Y.-based chain with around 200 locations worldwide plus some 145 ghost kitchens, is teaming up with Slapfish, the 27-unit fast-casual seafood restaurant out of Huntington Beach, Calif., to present the Surf’N Turf. Developed in collaboration with Slapfish chef and founder Andrew Gruel the $19.99 sandwich has half a pound of rib eye steak with caramelized onions and American cheese, plus a quarter pound of butter-poached lobster in a Balthazar Bakery bun that has been dressed with Pat LaFrieda steak sauce mixed with mayonnaise.

The sandwich is available now through the summer at Nathan’s flagship location on Coney Island in New York City, which has sold lobster rolls during the summer for years, as well as at Slapfish’s flagship in Huntington Beach.

Gruel said that he might also offer it at other Southern California locations.

He joined Restaurant Hospitality’s staff in 2016 while retaining his position at NRN. 

A magna cum laude graduate of Tufts University in Medford, Mass., with a bachelor’s degree in history, and a member of Phi Beta Kappa, Thorn also studied traditional French cooking at Le Cordon Bleu Ecole de Cuisine in Paris. He spent his junior year of college in China, studying Chinese language, history and culture for a semester each at Nanjing University and Beijing University. While in Beijing, he also worked for ABC News during the protests and ultimate crackdown in and around Tiananmen Square in 1989.

Thorn’s monthly column in Nation’s Restaurant News won the 2006 Jesse H. Neal National Business Journalism Award for best staff-written editorial or opinion column.

He served as president of the International Foodservice Editorial Council, or IFEC, in 2005.

Thorn wrote the entry on comfort food in the Oxford Encyclopedia of Food and Drink in America, 2nd edition, published in 2012. He also wrote a history of plated desserts for the Oxford Companion to Sugar and Sweets, published in 2015.

He was inducted into the Disciples d’Escoffier in 2014.

A Colorado native originally from Denver, Thorn lives in Brooklyn, N.Y.
