YIELD: 4 servings
1 Bartlett pear, ripe, peeled, seeded, cut into chunks, chilled
½ cup diced pear in syrup
2 Tbsps. creamy peanut butter
1 Tbsp. peanut flour
2 Tbsps. granulated sugar
1 tsp. minced ginger or ginger puree
½ tsp. lemon zest
2 tsps. lemon juice
1 ½ cups ice cubes
1. Place all ingredients in blender and process just until smooth (overprocessing will make this drink less flavorful). Garnish each glass with thin wedge of pear and serve immediately.
