Ben Guggenmos, culinary specialist, School District of Hillsborough County in Florida, created this healthy version of the kid-favorite Rice Krispies treat. The butter is replaced with flax seed oil; honey was used in place of sugar; slivered almonds add a crunch, fiber and calcium; and Rice Krispies were replaced with Kashi 7 Whole Grain Puffs.

Ingredients

6 cups Kashi 7 Whole Grain Puffs
1 cup slivered almonds
3 tbsp. flax seed oil
2 tbsp. Orange Blossom Honey
5 cups mini marshmallows

Steps

1. Lightly coat inside of a 13 x 9 x 2-in. metal pan with oil and set aside. Preheat oven to 400°F.

2. Spread Kashi cereal and almonds evenly on pan lined with parchment paper and toast in oven for 9 to 10 mins. or until golden brown. Once done, remove from oven and set aside.

3. Place oil, honey, and marshmallows in large mixing bowl set over pot of gently simmering water. Stir until marshmallows are melted. Once marshmallows are melted, quickly add toasted Kashi cereal, almonds and stir to combine.

4. Coat hands or spatula with oil or pan spray and spread mixture evenly into pan. Once mixture has cooled completely, cut into squares in a 4X4 pattern.
