YIELD: 16 servings
3 ¾ cups applesauce
6 cups blackberries, individually quick frozen
4 lbs. lowfat vanilla yogurt
1. Place applesauce and blackberries in blender. Blend on high speed 1 minute. Stop blender; stir with spatula. Continue to blend until smooth.
2. Measure to verify pureeing has resulted in 8 cups fruit. Puree additional fruit if necessary. Whisk puree and yogurt together in large mixing bowl until smooth.
3. Portion into serving cups and cover. Serve chilled. May be refrigerated overnight.
