Apple Pie Yogurt Parfait

Although this parfait was developed as a breakfast offering at West Virginia University, it can easily double as a snack or dessert. It’s one of the Mindful by Sodexo recipes that aim to balance nutrition with enticing flavors to offer a more indulgent way to enjoy healthy eating.
Ingredients
¼ cup pecans, chopped
1 cup diced, peeled and cored apples (1/4-in. dice)
3 tsp. brown sugar
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
¼ cup granola
2 cups Greek yogurt
Steps
1. Preheat oven to 400 F. Arrange pecan pieces on baking sheet; bake 3 to 5 minutes until lightly toasted. Remove from oven; cool.
2. In mixing bowl, combine toasted pecan pieces, diced apples, sugar, cinnamon and nutmeg. Toss until well-combined.
3. In each of four glasses or parfait cups, layer some of apple mixture and granola; top each with ½ cup yogurt. Add a dollop of apple mixture and another sprinkling of granola.
