Loyola Marymount University hosts wellness challenge for students

The week-long event featured a handful of plant-based recipes for students to try.

Loyola Marymount University in Los Angeles hosted a wellness challenge for students.

The week-long event was held at Modern Recipe at the Lair Marketplace and aimed to encourage students to try plant-based meals.

Each day during the challenge, the dining team featured a selection of plant-based recipes for students to enjoy including a Roasted Tofu and Edamame Hummus Bowl, an Acai Berry Bowl, and a Black Bean and Chickpea Burger.

For each plant-based meal purchased, students received a raffle ticket to win a handful of prizes including a Cruiser bike and helmet, AirPods Pro and AirPods Max. A total of 309 students participated in the raffle, according to the dining team.

Plant-based offerings continue to grow on college campuses. Last spring, Sodexo announced a goal to have 50% of its college and university menus to be plant-based by 2025. Big 10 schools, including Penn State, are also jumping on the trend as well.

Almost 80% of Gen Zers eat plant-based meals on a weekly basis, according to data from foodservice provider Chartwells Higher Ed.
