How Graze Craze is taking charcuterie nationwide

Kerry Sylvester and Brady Lee are turning the charcuterie trend into a growing foodservice business.

Graze Craze Founder Kerry Sylvester and President Brady Lee are bringing the charcuterie trend across the country via a franchise model.

The focus of the 12-location chain is the charcuterie board, which became an Instagram sensation as photos of more and more elaborate creations were posted on the social media platform.

Operating out of a small-footprint store, Graze Craze offers several charcuterie variations for takeout and delivery only, ranging from individual snack boxes to large boards for a crowd. The items feature house-baked breads, local ingredients and small-batch condiments.

The concept began franchising in 2021 as part of the United Franchise Group’s family of brands, which is how Lee got involved. Listen as the two describe how Graze Craze tapped into a new foodservice niche and how snacking, social media and franchising are fueling its growth.
