Farmers Market Braised Pork Shoulder with Dark Cherry Espagnole Sauce and Crunchy Oat and Nut Granola

Rice University (Houston)

Topped off with housemade granola, this sweet and savory dish was inspired by ingredients found at the weekly Rice University Farmers Market. Each Thursday, Chef Sarah Finster works closely with a group of Rice students to prepare a special dish inspired by items found at the market. “Students look forward to Thursday lunches and Chef Sarah’s sustainable creations,” explains Susann Glenn, manager of communications at Rice. “Rice students are able to shop at the market using [meal plan points] and Sarah’s creations are an example of how they’re able to use ingredients they purchase. Several of Sarah’s recipes are posted online, and the students use those as shopping lists.”

Homemade Granola

Johnson County Community College (Overland Park, Kan.)

“Customers love this product because of the flavor of the homemade granola,” according to the dining services team at Johnson County Community College. “One customer tried several brands [available] in her [grocery] store and finally asked us if our team at the college made it ‘because she couldn’t find anything that tasted as good.’ It’s a very good selling item throughout all the retail operations including our coffee bars and Café Tempo,” the team says. “Very popular among staff and students alike.”

Granola

Greenville County Schools

This granola recipe from Greenville County Schools in South Carolina was developed by a high school student and Chef Ron Jones. The student had been “kind of waging a war on us,” says Eileen Staples, director of food and nutrition services. To get the student to buy into the foodservice program, Jones invited him to the kitchen to work on creating a recipe that he would like to eat. The granola is used in a yogurt parfait that is offered every day for breakfast.

Raspberry Yogurt Parfait with Housemade Granola

A great option for breakfast or an afternoon snack, this parfait features granola made with honey, oatmeal, almonds and pecans, as well as raspberry yogurt, raspberry preserves and low-fat vanilla yogurt.
