Metz puts ancient grains on the menu in honor of American Heart Month

The foodservice provider is debuting 24 different recipes using farro, quinoa and more.

February is American Heart Month and Metz Culinary Management is celebrating with a variety of new heart-healthy recipes using ancient grains.

The foodservice provider has partnered with research and development chefs at food manufacturing company Furmano Foods to create 24 recipes that use quinoa, farro and more.

The recipes cover all meal parts and include dishes like Crunchy pepperoni-flavored quinoa and cheese pizza, Porcini farro risotto,  Mediterranean quinoa salad, Tri-color quinoa “rice” pudding, Sorghum with apple and brown sugar, Everything bagel farro salad and Cheesy quesadilla flatbread with taco-flavored quinoa.

Diners will also be able to enjoy dessert options including a Tri-color quinoa "rice" pudding. 

The offerings will be available at Metz’s K-12, higher education, independent dining, corporate and healthcare locations.  

“Grains of Love is the perfect opportunity for Metz to display the company’s commitment to our guests’ well-being and sourcing ingredients that support a healthy and sustainable planet,” said Adam Carlson, division chef for K12 and B&I Dining for Metz, in statement. “Our chefs have incorporated ancient grains into traditional recipes to deliver innovative breakfast, lunch, dinner and dessert items that guests are raving about.”

Representatives from U.S. Foods for Furmano Foods will also be at 16 higher education locations to educate students about the health benefits of ancient grains.
