In its culinary trends report for the coming year, FM Top 50 firm Metz Culinary Management Inc. predicts an emphasis being placed on areas like nostalgic foods, chaos cuisine, ancient grains/heritage ingredients, upcycling/zero waste and technology that increases efficiency and reduces checkout times. The company operates across multiple onsite dining markets, including education, healthcare and business dining. 

“Our chefs and dietitians study the direction our industry is poised to take every year,” explains Executive Vice President Maureen Metz. “We listen closely to what our guests are saying and then create new recipes and employ technologies that they will enjoy and engage with.”
