This salad from the University of Kentucky mixes apples, walnuts, celery and apples for a classic Waldorf Salad. 

Ingredients

6 heads iceberg and romaine
2 1/2 cups mayonnaise (or yogurt)
3/4 cup fresh lemon juice
2 tbsp. salt
1 tbsp. pepper
6 cups chopped, slightly toasted walnuts
6 cups thinly sliced celery
6 cups sliced red seedless grapes (or a 3 cups of raisins)
12 sweet apples, cored and chopped

Steps

1. Chop romaine and iceberg. Blend together and set aside.
2. In medium sized bowl, whisk together mayonnaise (or yogurt) and lemon juice. Add salt and fresh ground pepper.
3. Mix in apple, celery, grapes and walnuts. Serve on bed of lettuce blend in chilled salad bowl.
