Quinoa Black Bean Burrito Bowl

YIELD: 4 servings

1 cup quinoa
1 Tbsp. olive oil
¼ cup minced onion
1 clove garlic
1 can black beans
¼ cup chopped cilantro
¼ tsp chili powder
pinch of cayenne
¼ cup fresh lime juice
1 cup shredded lettuce
1 avocado
2 cups corn
2 tomatoes, diced
sour cream

1. Rinse quinoa.

2. Add to sauce pan with 2 cups water, bring to a boil, cover and let simmer for about 20 minutes.

3. While cooking quinoa, sauté onions in oil until they start to brown.  Add garlic, sauté a few minutes more; add beans and cilantro, chili powder and cayenne.

4. Bring beans to a boil and simmer until cooked through.

5. Add lime juice season with salt.

6. Serve quinoa in a bowl and top with black beans, lettuce, tomato, corn, sour cream, avocado and cheese.
