This colorful pita is the perfect sandwich for pork lovers. With a hint of cucumbers and mint, this sandwich creates a perfect mixture of flavors.

Ingredients

4 garlic cloves
2 tsp. salt
1 tsp. ground black pepper
1 tsp. ground allspice
1 tsp. ground cardamom
½ tsp. ground nutmeg
1 cup plain yogurt
2 oz. lemon juice
2 lb. boneless pork collar butt, thinly sliced
8 pita breads

Tzatziki
1 med. cucumber, peeled, seeded and chopped fine
1 lb. plain yogurt, strained
Pinch kosher salt
4 garlic cloves, minced
1 tbsp. extra virgin olive oil
2 tsp. red wine vinegar
5 mint leaves, chopped

Steps

  1. In large bowl, combine garlic, salt, pepper, allspice, cardamom and nutmeg. Stir in yogurt and lemon juice. Add pork; coat well and marinate for 1 hr.

  2. Meanwhile, prepare Tzatziki.

  3. On grill, cook marinated pork 5 to 8 min., turning as needed, until it reaches an internal temperature of 138°F. Let rest briefly.

  4. Split pita breads and fill with pork. Top with tzatziki and garnish as desired.

Tzatziki

  1. Squeeze liquid from cucumbers. In bowl, combine yogurt, cucumbers and remaining ingredients. Mix well to combine.
