Quinoa is quick to prep and makes a light side for a summer meal. Take quinoa from ordinary to extraordinary by adding sweet grilled pineapple, tomatoes and fresh herbs for a refreshing salad.
Ingredients
1 quart cooked red quinoa
2 quarts vegetable stock
1 whole pineapple, grilled and diced
1 red onion, diced
2 pints grape tomatoes
8 oz. shredded carrot
2 jalapeno peppers, diced fine
1/4 cup chopped fresh mint
1/4 cup chopped fresh cilantro
Dressing
1 whole avocado
2 oz. honey
8 oz. rice wine vinegar
1 shallot, diced fine
1 tbsp. lite soy sauce
1 lime, zested
4 oz. water
Steps
1. Steam quinoa in vegetable stock until tender (20 minutes).
2. Cool, add all ingredients, mix well
Dressing
1. Mix all ingredients in large mixing bowl
2. Pour over quinoa and mix well
3. Serve as a side salad or starch.
