Nashville Hot Spicy Fried Chicken Sandwich
Nashville fried chicken has traveled from its Tennessee roots to pop up on menus across the country. At Legends of Notre Dame, a restaurant and pub on the university’s campus, chef Josh Maron menus the spicy chicken as a sandwich. He tosses a crispy fried chicken breast in housemade Nashville-style hot sauce and layers it on a toasted brioche bun with mayo, lettuce and pickles.

He tosses a crispy fried chicken breast in housemade Nashville-style hot sauce and layers it on a toasted brioche bun with mayo, lettuce and pickles.
Ingredients
Nashville hot sauce
1 cup lard or butter, melted
6 tbsp. ground cayenne pepper
2 tbsp. brown sugar
1 tbsp. hot pepper sauce
1½ tsp. kosher salt
1 tsp. paprika
1 tsp. granulated garlic
1 tsp. ground black pepper
Chicken sandwich
1 brioche bun, butter toasted
2 tbsp. mayonnaise
½ cup shredded iceberg lettuce
1 breaded chicken breast fillet, deep-fried and kept warm
2 tbsp. Nashville hot sauce (recipe above)
6 crinkle-cut dill pickle slices, drained
Steps
1. For sauce: Combine all ingredients in saucepan or container and whisk until well blended. Keep warm for service.
2. For sandwich: Spread mayonnaise on top and bottom halves of bun. Layer lettuce on bottom half.
3. Brush warm chicken with 2 tablespoons Nashville hot sauce; layer over lettuce. Top with pickle slices and bun to close sandwich.
