Moroccan Lamb Sausage Grilled Flatbread Pizzas

YIELD: 4 (8") INDIVIDUAL FLATBREADS

8 oz. lamb, ground

1 Tbsp. garlic pepper sauce

½ tsp. cumin

¼ tsp. cinnamon

1 tsp. paprika

½ tsp. garlic powder

½ tsp. orange zest

½ tsp. black pepper

1 ½ tsp. salt

4 pocketless pita bread, whole wheat, 8"

5 Tbsps. olive oil, divided

2 cups prepared hummus

1 cup feta cheese, crumbled

½ cup black olives

1 cup tomatoes, ½" dice

1 cup roasted red pepper, ½" dice

4 tsps. cilantro, chopped

4 tsps. mint, chopped

1 lemon, cut into wedges

  1. Preheat oven to 400° and preheat grill or grill pan.

  2. Combine lamb, garlic-pepper sauce, cumin, cinnamon, paprika, garlic powder, orange zest, pepper and salt. Mix thoroughly to make sausage mixture. Heat 1 Tbsp. olive oil in a large sauté pan over medium-high heat. Add sausage mixture, breaking it apart as it cooks. Cook until medium rare, remove from pan and drain excess fat.

  3. Brush one side of each pita with 1 Tbsp. olive oil. Grill on both sides over medium heat.

    Place pitas on tray. Spread the oiled side of each pita with an even layer of hummus. Top with sausage, feta, olives, tomatoes and peppers. Bake 8 to 10 minutes.

  4. Remove from oven and sprinkle with cilantro and mint. Squeeze fresh lemon juice over pizzas and cut each into 4 pieces.
