½ bag of Simplot cous-cous grain blend
8 radishes, quartered
12 grape tomatoes, quartered
Juice of ½ a lemon
Zest of ½ lime
Zest and segment of ½ an orange
½ serrano pepper, diced
¼ cup of olive oil
Steps:
Heat grains according to package directions.
Chill; then add all other ingredients in a bowl to combine.
Season with salt and pepper as needed.
