Grilled watermelon, honeydew melon and cantaloupe combine with feta cheese and honey to create a colorful and flavorful salad.

Ingredients

1 seedless watermelon, peeled
1 honeydew melon, peeled, seeded
1 cantaloupe, peeled, seeded
Light olive oil for brushing
Kosher salt and black pepper to taste
1 oz. extra virgin olive oil
1 oz. white wine vinegar
1 tsp. honey
2 oz. crumbled feta cheese
Chiffonade mint for garnish 

Steps

1. Preheat grill to high. Cut all fruit into 2-inch-thick slabs. Brush with light olive oil and season with salt and pepper. Grill fruit on high for 2 minutes, then quarter turn and grill for additional 2 minutes. Flip and grill additional 2 minutes.

2. Cool fruit, then cut into 2-inch cubes. Mix fruit gently with extra virgin olive oil, vinegar and honey. Add feta and mint.
