Cuban Sausage Sandwich with Pineapple

YIELD: 8 servings
2 Tbsps. olive oil
2 medium onions, thinly sliced
1 tsp. ground cumin
¼ tsp. red pepper flakes
3 large tomatoes, seeded and chopped
¾ cup strong brewed coffee
8 fully cooked smoked sausages
1 ½ cups frozen ready-cut pineapple cubes, partially thawed
8 French bread rolls or hoagie rolls
salt, to taste
1.Heat olive oil in large skillet or sauce pot; sauté onion, green pepper, cumin and red pepper flakes 5 minutes or until onion begins to caramelize.
2.Add chopped tomatoes, coffee and salt; simmer for 10 minutes. Then add sausage and pineapples, simmer 5 minutes longer or until sausage is heated through. Meanwhile, heat rolls.
3.Serve sausage in each roll, spooning tomato and pineapple mixture over.
