Classic Onion Soup

This classic onion soup is a great comfort food option for the colder months. This recipe uses yellow onions, reduced-sodium chicken broth and brandy.

Ingredients

6 tbsp. butter or margarine
4 large yellow onions, sliced
1 tbsp. sugar
2 qts. reduced-sodium chicken broth
1/2 cup brandy (optional)
Salt and pepper, to taste
1/2 baguette French bread, sliced, toasted
Grated Romano cheese

Steps

1. Melt butter in large saucepan that holds at least 4 quarts. Add onions; cook over medium heat 12 mins. or until tender and golden, stirring often.

2. Add sugar and cook, stirring for 1 min. Add broth; cover and bring to a boil.

3. Reduce heat; simmer 12 mins. If desired, add brandy; cook 2 mins. longer. Season with salt and pepper. To serve, ladle soup into bowl; float toast on soup. Sprinkle with cheese.
